Here is her recipe..
Filling Ingredients
6 large or 8 small cooking apples
1 cup of sugar
½ cup of water
4 cloves
Pastry Ingredients
2 cups plain flour
1-2 tablespoons of milk
165g of butter
⅓ cup of caster sugar
1 egg yolk
Method
Peel and quarter apples. Cut into slices. Put into large saucepan with water, cloves and sugar. Bring to boil, reduce heat and cook gently for 15 minutes, stirring occasionally. Remove the cloves and cool.
Pastry
Sieve flour, rub in butter, mix in the caster sugar. Add egg yolk and enough milk until a dough forms. Refrigerate in Glad Wrap for 30 minutes.
Cut dough in half and roll out to fit a greased pie dish. Put in the cooled apples. Roll the other half to fit the top of the pie, moisten the edges with egg white and place the top over the apple filling. Primp edges and use a fork to prick the top. Brush the top with egg white and lightly sprinkle over some sugar.
Cook for 30 minutes in a 180° oven or until golden.
Enjoy.
